Chef Dan Stacy, co-founded Royal Fig Catering in 2009 after planning his own wedding with wife Kristen and seeing a void in the market for full service caterers specializing in farm-to-table cuisine. A food enthusiast and experienced in marketing and sales, Kristen found catering was a perfect fit after spending 10 years using her talents expanding arts-in-education programs in Ohio, Austin and New York City. After 2 1/2 years of running Royal Fig, Chef Dan's culinary skills and Kristen's experience in marketing and sales led them to open The Seedling Truck in 2011. With The Seedling Truck, they were able to reach outside of the event industry and bring their rotating farm fresh menus to the general public. Their new projects include two full service event spaces - The Harvest Room at Royal Fig accommodating parties up to 40 guests and Bella Varenna, a venue on the shores of Lake Travis that can hold up to 200 guests.
