Tapas Bravas is a new Food Truck and Catering service that launched ths summer of 2012 to bring Authentic Spanish cuisine to Austin on location on trendy Rainey Street and at various events through catering and delivery. With all hand-made and mostly locally-sourced ingredients, chef Jed Holdredge has created a menu of traditional Tapas (small plates of food for tasting and sharing with others), a staple in Spanish restaurants world-wide. Among favorites are the namesake "Patatas Bravas" a dish of fried potato cubes smothered in spicy tomato sauce and fresh garlic aioli; available in two heat levels: "Brava" is a medium heat (spicy for the Spanich palette) and "Atómica", an amped up version that's akin to bold Mexican salsa. Featured in the Austin Tour De Vin in the W Hotel, the Tapas Bravas meatballs (Albóndigas) and goat cheese stuffed piquillo peppers are fantastic with Spanish wines and of course, Sangria. Setup kits available at the food truck means you can BYOB and enjoy this fruity wine beverage with your Spanish taste tour. Chef and creator, Jed Holdredge studied Spanish language and literature and learned to cook while living in Valencia, Spain where he learned household standard dishes such as Tortilla Espanola and fell in love with the tradition of the Tapas crawl, where friends get together, drink wine, and go from bar to bar to share various drinks and dishes through the night. One dish that has taken Austin by storm is "Croquetas", a small fried dish made with chicken and Serrano ham mixed into batter and deep fried. And to meet even the toughest foodie appetite, he has pâtés of duck and of rabbit that make Tapas Bravas a legit dinner destination. Local sources include Countryside Farms, Easy Tiger Bakery, Antonelli's cheese, Morehart Farms, and Aurelia's chorizo.
